Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or non-stick cooking spray.
- In a medium bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.
- In a separate large bowl, beat the softened butter and eggs until light and fluffy, about 2-3 minutes.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
- In a small bowl, mix the softened cream cheese, 2 tablespoons sugar, and cranberries until well combined.
- Spread half of the bread dough into the prepared loaf pan, top with the cream cheese-cranberry mixture, then carefully spread the remaining dough over the top.
- Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
Notes
- For extra moistness, you can substitute part of the all-purpose flour with oat or whole wheat flour.
- If the top is browning too quickly, cover the loaf loosely with aluminum foil during the last 10-15 minutes of baking.
- Let the loaf cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
