Description

This Cream Cheese Cranberry Loaf is a rich, flavorful dessert that combines a tangy cream cheese swirl with the tartness of fresh cranberries. Perfect for the holiday season or any time you want a comforting, sweet treat, this loaf is sure to impress with its moist texture and delicious balance of flavors.

Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (softened)
  • 2 large eggs
  • 8 oz cream cheese (softened)
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or non-stick cooking spray.
  2. In a medium bowl, whisk together the all-purpose flour, sugar, baking powder, and salt.
  3. In a separate large bowl, beat the softened butter and eggs until light and fluffy, about 2-3 minutes.
  4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  5. In a small bowl, mix the softened cream cheese, 2 tablespoons sugar, and cranberries until well combined.
  6. Spread half of the bread dough into the prepared loaf pan, top with the cream cheese-cranberry mixture, then carefully spread the remaining dough over the top.
  7. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.

Notes

  • For extra moistness, you can substitute part of the all-purpose flour with oat or whole wheat flour.
  • If the top is browning too quickly, cover the loaf loosely with aluminum foil during the last 10-15 minutes of baking.
  • Let the loaf cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.
