Description

Creamy Coq Au Riesling is a classic French dish where chicken is braised in wine, enriched with bacon, mushrooms, and herbs, then finished off with a creamy sauce. It’s a comforting, flavorful, and indulgent dish perfect for any occasion.


Ingredients

  • 1/2 large yellow onion, finely diced
  • 1 cup finely chopped bacon
  • 4 tbsp vegetable oil
  • 3 garlic cloves, minced
  • 2 chicken thighs, 2 chicken legs
  • 1 cup Swiss brown mushrooms (or Baby Bella mushrooms), sliced
  • 1 tbsp chopped thyme
  • 1 tbsp chopped parsley
  • 2 cups Riesling white wine
  • 3/4 cup heavy cream
  • 2 medium russet potatoes, chopped into chunks
  • 2 tsp ground black pepper
  • Salt, to taste
  • For the roux: 4 tbsp butter, 4 tbsp flour
  • For garnish: Chopped parsley
  • For serving: Fresh French bread, butter


Instructions

  1. In a thick-bottomed pan (preferably a lidded cast iron skillet), heat the oil on medium-high heat.
  2. Season the chicken with salt and pepper, then brown the chicken pieces in the pan on all sides. Remove and set aside.
  3. Drain excess fat from the pan. Add the diced onion and chopped bacon. Fry until the onion turns translucent and the bacon renders its fat.
  4. Add minced garlic and sauté for 1-2 minutes until fragrant.
  5. Stir in the sliced mushrooms and herbs, cooking for 5 minutes until the mushrooms soften.
  6. Remove the mushroom mixture from the pan. Add butter to the pan, allowing it to melt. Stir in the flour to form a smooth roux, cooking for 2 minutes without browning.
  7. Return the mushroom mixture to the pan, add the Riesling wine, and stir until smooth.
  8. Add the browned chicken and chopped potatoes to the pan. Bring to a boil.
  9. Reduce the heat and simmer for 15-20 minutes until the chicken is fully cooked and potatoes are tender.
  10. Stir in the heavy cream, heating through for a few more minutes.
  11. Serve immediately, garnished with chopped parsley and with crusty French bread on the side for dipping.

Notes

  • If the sauce is too thick, add a splash of chicken stock or water to thin it out.
  • For extra depth of flavor, let the dish sit for 10-15 minutes after cooking.
  • For a dairy-free version, substitute heavy cream with coconut cream or a plant-based cream.
  • Fresh thyme can be substituted with dried thyme, but use less since dried herbs are more concentrated.
  • If using chicken breasts instead of thighs, adjust the cooking time to prevent overcooking.
