Description
Creamy Coq Au Riesling is a classic French dish where chicken is braised in wine, enriched with bacon, mushrooms, and herbs, then finished off with a creamy sauce. It’s a comforting, flavorful, and indulgent dish perfect for any occasion.
Ingredients
Scale
- 1/2 large yellow onion, finely diced
- 1 cup finely chopped bacon
- 4 tbsp vegetable oil
- 3 garlic cloves, minced
- 2 chicken thighs, 2 chicken legs
- 1 cup Swiss brown mushrooms (or Baby Bella mushrooms), sliced
- 1 tbsp chopped thyme
- 1 tbsp chopped parsley
- 2 cups Riesling white wine
- 3/4 cup heavy cream
- 2 medium russet potatoes, chopped into chunks
- 2 tsp ground black pepper
- Salt, to taste
- For the roux: 4 tbsp butter, 4 tbsp flour
- For garnish: Chopped parsley
- For serving: Fresh French bread, butter
Instructions
- In a thick-bottomed pan (preferably a lidded cast iron skillet), heat the oil on medium-high heat.
- Season the chicken with salt and pepper, then brown the chicken pieces in the pan on all sides. Remove and set aside.
- Drain excess fat from the pan. Add the diced onion and chopped bacon. Fry until the onion turns translucent and the bacon renders its fat.
- Add minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in the sliced mushrooms and herbs, cooking for 5 minutes until the mushrooms soften.
- Remove the mushroom mixture from the pan. Add butter to the pan, allowing it to melt. Stir in the flour to form a smooth roux, cooking for 2 minutes without browning.
- Return the mushroom mixture to the pan, add the Riesling wine, and stir until smooth.
- Add the browned chicken and chopped potatoes to the pan. Bring to a boil.
- Reduce the heat and simmer for 15-20 minutes until the chicken is fully cooked and potatoes are tender.
- Stir in the heavy cream, heating through for a few more minutes.
- Serve immediately, garnished with chopped parsley and with crusty French bread on the side for dipping.
Notes
- If the sauce is too thick, add a splash of chicken stock or water to thin it out.
- For extra depth of flavor, let the dish sit for 10-15 minutes after cooking.
- For a dairy-free version, substitute heavy cream with coconut cream or a plant-based cream.
- Fresh thyme can be substituted with dried thyme, but use less since dried herbs are more concentrated.
- If using chicken breasts instead of thighs, adjust the cooking time to prevent overcooking.
