Instructions

  1. Slice the chicken breasts in half lengthwise to create thin cutlets and pat them dry.
  2. In a bowl, mix gluten-free bake mix or almond flour, Parmesan cheese, salt, and black pepper. Coat each chicken piece evenly.
  3. Heat olive oil in a skillet over medium heat and cook the chicken for 4–5 minutes per side until golden and nearly cooked through. Remove and set aside.
  4. In another skillet, melt butter over medium heat and sauté the crushed garlic until fragrant and lightly golden.
  5. Add chicken stock and let it simmer for 2–3 minutes to develop flavor.
  6. Pour in the heavy cream and stir continuously, allowing the sauce to thicken slightly.
  7. Add mozzarella cheese and Parmesan cheese, stirring until fully melted and smooth.
