- 2 tablespoons olive oil (30 ml)
- 1 tablespoon unsalted butter (14 g)
- 2 cups sliced mushrooms (about 150 g)
- 3 cloves garlic, minced (about 1 tablespoon)
- 1/2 cup chicken broth (120 ml)
- 1/2 cup heavy cream (120 ml)
- 1/4 cup grated Parmesan cheese (25 g)
- 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Season the chicken breasts evenly on both sides with salt and black pepper.
- Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5–7 minutes per side until golden brown and the internal temperature reaches 165°F (75°C). Remove from the skillet and set aside.
- In the same skillet, add the butter and sliced mushrooms. Cook for about 5 minutes until mushrooms are tender and lightly browned.
- Add the minced garlic and sauté for 1 minute until fragrant, stirring constantly to prevent burning.
- Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2–3 minutes to reduce slightly.
- Stir in the heavy cream and grated Parmesan cheese. Simmer for 3–4 minutes, stirring occasionally, until the sauce thickens.
- Return the chicken breasts to the skillet and spoon the creamy mushroom sauce over the top. Sprinkle with thyme and simmer for 2–3 minutes to meld the flavors.
- Garnish with chopped parsley and serve hot with your choice of pasta, rice, or vegetables.
