Description

Creamy Mushroom Chicken is a rich and comforting one-pan dinner featuring golden seared chicken breasts simmered in a garlic Parmesan mushroom cream sauce.   • 4 boneless, skinless chicken breasts (about 680 g / 1.5 lbs)
  • 2 tablespoons olive oil (30 ml)
  • 1 tablespoon unsalted butter (14 g)
  • 2 cups sliced mushrooms (about 150 g)
  • 3 cloves garlic, minced (about 1 tablespoon)
  • 1/2 cup chicken broth (120 ml)
  • 1/2 cup heavy cream (120 ml)
  • 1/4 cup grated Parmesan cheese (25 g)
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Season the chicken breasts evenly on both sides with salt and black pepper.
  2. Heat olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5–7 minutes per side until golden brown and the internal temperature reaches 165°F (75°C). Remove from the skillet and set aside.
  3. In the same skillet, add the butter and sliced mushrooms. Cook for about 5 minutes until mushrooms are tender and lightly browned.
  4. Add the minced garlic and sauté for 1 minute until fragrant, stirring constantly to prevent burning.
  5. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 2–3 minutes to reduce slightly.
  6. Stir in the heavy cream and grated Parmesan cheese. Simmer for 3–4 minutes, stirring occasionally, until the sauce thickens.
  7. Return the chicken breasts to the skillet and spoon the creamy mushroom sauce over the top. Sprinkle with thyme and simmer for 2–3 minutes to meld the flavors.
  8. Garnish with chopped parsley and serve hot with your choice of pasta, rice, or vegetables.

Notes

  • Use room temperature chicken for even cooking and better browning.
  • Do not overcrowd the pan to ensure a proper golden sear.
  • If the sauce becomes too thick, add 1–2 tablespoons of chicken broth to loosen it.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently over low heat to prevent the cream sauce from separating.
