Description

  • 1/2 cup apple cider or apple juice
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup or honey
  • 1 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract (optional)


Instructions

  1. In a medium saucepan, combine the pumpkin puree, apple cider or juice, brown sugar, and maple syrup or honey. Stir in the cinnamon, ginger, nutmeg, cloves, allspice, and salt.
  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer. Stir frequently, reducing the heat to low once simmering. Cook for 20-30 minutes, stirring occasionally, until the mixture thickens and darkens in color.
  3. If using, stir in the vanilla extract after removing the saucepan from the heat.
  4. Allow the pumpkin butter to cool completely before transferring it to a jar or airtight container. Store it in the refrigerator for up to two weeks.
  5. Serve on toast, pancakes, waffles, oatmeal, or yogurt as a sweet seasonal spread.
