Instructions

  1. Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Drain and set aside.
  2. Season the shrimp with paprika, salt, and black pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2 to 3 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside.
  4. Reduce heat to medium and melt the butter in the same skillet. Add minced garlic and sauté for 1 minute until fragrant.
  5. Pour in the heavy cream and chicken broth, stirring until combined. Bring the mixture to a gentle simmer.
  6. Add grated Parmesan cheese and stir until melted and smooth.
  7. Mix in the chopped sun-dried tomatoes and fresh spinach. Cook for 3 to 4 minutes until the spinach wilts and the sauce thickens slightly.
  8. Return the cooked shrimp and drained pasta to the skillet. Toss well until everything is evenly coated with the creamy sauce.
  9. Garnish with fresh basil if desired and serve immediately.
