Ingredients
Scale
- 8 oz fettuccine pasta
- 1 tablespoon olive oil
- 1 lb large shrimp, peeled and deveined
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup grated Parmesan cheese
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 tablespoon fresh basil, chopped (optional)
Instructions
- Bring a large pot of salted water to a boil and cook the fettuccine according to package instructions until al dente. Drain and set aside.
- Season the shrimp with paprika, salt, and black pepper.
- Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 2 to 3 minutes per side until pink and opaque. Remove shrimp from the skillet and set aside.
- Reduce heat to medium and melt the butter in the same skillet. Add minced garlic and sauté for 1 minute until fragrant.
- Pour in the heavy cream and chicken broth, stirring until combined. Bring the mixture to a gentle simmer.
- Add grated Parmesan cheese and stir until melted and smooth.
- Mix in the chopped sun-dried tomatoes and fresh spinach. Cook for 3 to 4 minutes until the spinach wilts and the sauce thickens slightly.
- Return the cooked shrimp and drained pasta to the skillet. Toss well until everything is evenly coated with the creamy sauce.
- Garnish with fresh basil if desired and serve immediately.
Notes
- Do not overcook the shrimp or they may become rubbery.
- Freshly grated Parmesan cheese creates a smoother sauce than pre-shredded cheese.
- Add a splash of reserved pasta water if the sauce becomes too thick.
- For extra heat, add red pepper flakes while cooking the garlic.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
