- 2 large eggs, beaten
- 1 cup breadcrumbs or panko
- Vegetable oil, for frying
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tbsp fresh dill, chopped
- 1 tbsp fresh chives, chopped
- 1 garlic clove, minced
- 1 tsp lemon juice
- Salt and pepper, to taste (for the dip)
Instructions
- In a small bowl, mix mayonnaise, sour cream, minced garlic, chopped dill, chopped chives, and lemon juice. Season with salt and pepper to taste. Cover and refrigerate while preparing mushrooms.
- Set up three shallow dishes: one with flour, garlic powder, paprika, salt, and pepper; one with beaten eggs; and one with breadcrumbs or panko.
- Dip each mushroom slice into the flour mixture, then into the beaten eggs, and finally coat with breadcrumbs or panko. Press lightly to adhere.
- Heat about 1 inch of vegetable oil in a skillet over medium-high heat until hot (around 350°F).
- Fry the mushrooms in small batches, about 2–3 minutes per side, until golden and crispy. Avoid overcrowding the pan.
- Transfer fried mushrooms to a paper towel-lined plate to drain excess oil.
- Serve hot with chilled cool ranch dip. Garnish with extra chives or dill if desired.
