Description

Crispy Loaded Hasselback Potato Bites are the ultimate bite-sized appetizer, combining golden roasted potatoes with gooey melted cheese, crispy bacon, sour cream, and green onions. Perfect for game days, parties, or as a delicious side dish, these mini Hasselbacks are easy to make and impossible to resist.

Ingredients

Scale
  • 1 lb small red or Yukon gold potatoes (about 2″ each)
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 4 oz Colby Jack cheese, sliced into small squares
  • 1/2 cup light sour cream
  • 4 slices cooked bacon, chopped
  • 2 tablespoons sliced green onions

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with aluminum foil.
  2. Using a sharp knife, make several thin slices across each potato, stopping just before slicing all the way through.
  3. Rub each potato with olive oil and sprinkle with kosher salt.
  4. Place potatoes cut-side up on the baking sheet and roast for 30 minutes, or until tender.
  5. Insert small squares of cheese into several cuts of each potato.
  6. Return to the oven and bake an additional 5–10 minutes, until the cheese is melted and bubbly.
  7. Let potatoes cool for 10 minutes.
  8. Top each potato with sour cream, chopped bacon, and sliced green onions.
  9. Serve warm or at room temperature.

Notes

  • Use chopsticks as a slicing guide to avoid cutting all the way through the potatoes.
  • Choose small, uniform potatoes for even roasting and presentation.
  • Can be made ahead: Roast the potatoes, then reheat and add toppings before serving.
  • Store leftovers in an airtight container and reheat in an oven or air fryer.
