- 750g / 1.5 lb baby potatoes, halved
- 2 tbsp olive oil, plus more for drizzling
- 1/2 cup (50g) finely grated parmesan (sand-like consistency)
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano or thyme
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/2 tsp black pepper
- Optional dipping sauce: 3/4 cup sour cream or plain yogurt
- Optional: 1/4 cup finely chopped green onions or chives
Instructions
- Preheat oven to 200°C/400°F (180°C fan-forced).
- In a bowl, mix the parmesan, garlic powder, oregano or thyme, paprika, salt, and black pepper.
- Drizzle 2 tbsp olive oil into a 9×13-inch (22x33cm) glass baking dish and tilt to coat the base.
- Sprinkle the parmesan mixture evenly over the oiled base—do not spread or press down.
- Place the halved potatoes cut-side down, pressing firmly into the cheese mixture.
- Optionally drizzle or spray the tops of the potatoes with oil and sprinkle lightly with salt.
- Bake for 35–40 minutes or until potatoes are tender and the parmesan crust is golden and crisp.
- Let rest for 5 minutes, then use a spatula to separate and flip potatoes cheese-side up for serving.
- Serve with optional sour cream dip and garnish with extra green onions if desired.
Notes
- Use sand-like parmesan from the refrigerated section for the best crispiness.
- Do not line the dish with parchment paper—this affects the crust texture.
- Freshly grated parmesan can be used if finely grated; measure by weight.
- Leftovers can be reheated cheese-side up in a hot oven for 5 minutes to re-crisp.
