Description

Crispy Roasted Parmesan Potatoes are a golden, cheesy side dish with a crackly parmesan crust and tender, fluffy centers. Perfect for dinners, parties, or as a snack, these potatoes are seasoned with garlic, herbs, and paprika for maximum flavor in every bite. Simple to make and incredibly satisfying, they’re the ultimate comfort food side.


Ingredients

  • 750g / 1.5 lb baby potatoes, halved
  • 2 tbsp olive oil, plus more for drizzling
  • 1/2 cup (50g) finely grated parmesan (sand-like consistency)
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano or thyme
  • 1/2 tsp paprika
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • Optional dipping sauce: 3/4 cup sour cream or plain yogurt
  • Optional: 1/4 cup finely chopped green onions or chives


Instructions

  1. Preheat oven to 200°C/400°F (180°C fan-forced).
  2. In a bowl, mix the parmesan, garlic powder, oregano or thyme, paprika, salt, and black pepper.
  3. Drizzle 2 tbsp olive oil into a 9×13-inch (22x33cm) glass baking dish and tilt to coat the base.
  4. Sprinkle the parmesan mixture evenly over the oiled base—do not spread or press down.
  5. Place the halved potatoes cut-side down, pressing firmly into the cheese mixture.
  6. Optionally drizzle or spray the tops of the potatoes with oil and sprinkle lightly with salt.
  7. Bake for 35–40 minutes or until potatoes are tender and the parmesan crust is golden and crisp.
  8. Let rest for 5 minutes, then use a spatula to separate and flip potatoes cheese-side up for serving.
  9. Serve with optional sour cream dip and garnish with extra green onions if desired.

Notes

  • Use sand-like parmesan from the refrigerated section for the best crispiness.
  • Do not line the dish with parchment paper—this affects the crust texture.
  • Freshly grated parmesan can be used if finely grated; measure by weight.
  • Leftovers can be reheated cheese-side up in a hot oven for 5 minutes to re-crisp.
