Description

Crispy Sweet Potato Bites are a crunchy, cheesy appetizer made with roasted sweet potatoes, Gruyère, Parmesan, fresh herbs, and a golden panko coating. Fried until crisp and finished with a drizzle of honey, they have a creamy center and irresistible sweet-savory flavor.

Ingredients

Scale
  • 4 medium sweet potatoes, peeled and quartered
  • 5 cloves garlic, smashed and peeled
  • 5 tablespoons unsalted butter, cubed
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 2 1/2 cups panko breadcrumbs
  • 4 ounces Parmesan cheese, finely grated (about 2 1/2 cups)
  • 3 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh sage, finely chopped
  • 5 large eggs
  • 8 ounces Gruyère cheese, shredded
  • Neutral oil, for frying (about 6 cups)
  • Honey, for drizzling

Instructions

  1. Position a rack in the center of the oven and preheat to 475°F (245°C). Place the sweet potatoes, garlic, and butter in a 13 x 9-inch baking dish. Season generously with salt and black pepper, then cover with foil.
  2. Bake for about 35 minutes, or until a knife slides easily into the sweet potatoes.
  3. Transfer the roasted sweet potatoes, garlic, and buttery juices to a large bowl. Mash and stir until mostly smooth. Adjust the seasoning with salt and pepper as needed.
  4. Spread the sweet potato mixture in an even layer on a plate and refrigerate for about 30 minutes, or until thoroughly chilled.
  5. Combine the panko breadcrumbs, Parmesan, parsley, sage, and a little salt in a shallow bowl. Whisk the eggs in a separate shallow bowl.
  6. Transfer the chilled sweet potato mixture back to a bowl. Add the shredded Gruyère and mix until evenly combined.
  7. Scoop tablespoon-size portions of the mixture and roll them into balls. Arrange the balls on a parchment-lined baking sheet.
  8. Pour neutral oil into a large, heavy pot to a depth of approximately 2 inches and heat to 350°F (175°C).
  9. Coat each sweet potato ball in the panko mixture, dip it in beaten egg, and coat it a second time with the panko mixture.
  10. Working in batches of about four, fry the bites for 2 to 3 minutes, turning occasionally, until deeply golden and crispy. Keep the oil close to 350°F while frying.
  11. Transfer the Crispy Sweet Potato Bites to a paper towel-lined tray to drain excess oil.
  12. Arrange on a serving platter, drizzle lightly with honey, and serve warm.

Notes

  • Chill the sweet potato mixture thoroughly before shaping to prevent the bites from becoming difficult to handle.
  • Keep the frying oil close to 350°F for a crisp coating that does not become excessively oily.
  • Fry in small batches to prevent the oil temperature from dropping too quickly.
  • Gruyère can be replaced with another flavorful hard or semi-hard melting cheese such as sharp cheddar, Gouda, or Fontina.
  • The sweet potato mixture can be prepared and refrigerated up to 3 days ahead. Prepare the egg and breadcrumb coatings fresh before frying.
  • For the crispiest texture, serve the bites shortly after frying.
  • Reheat leftovers in an oven or air fryer rather than a microwave to help restore the crispy coating.
  • Hot honey can replace regular honey for a spicy-sweet variation.
