Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 2 tbsp fresh lime juice
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 8 flour or corn tortillas, for serving
  • Optional toppings: shredded cheese, sour cream, guacamole, salsa, chopped cilantro, sliced avocado, diced tomatoes, jalapeños


Instructions

  1. Slice the bell peppers and onion into thin strips.
  2. Place the chicken breasts in a bowl and coat with olive oil, cumin, chili powder, garlic powder, salt, and black pepper.
  3. Add the sliced onions and peppers to the bottom of the slow cooker.
  4. Place the seasoned chicken on top of the vegetables.
  5. Pour the fresh lime juice over the chicken and vegetables.
  6. Cover and cook on LOW for 6 hours or HIGH for 3 hours, until the chicken reaches an internal temperature of 165°F (74°C).
  7. Remove the chicken from the slow cooker and shred it using two forks.
  8. Return the shredded chicken to the slow cooker and stir well with the vegetables and cooking juices.
  9. Warm the tortillas before serving.
  10. Fill tortillas with the chicken mixture and garnish with your favorite toppings before serving.

Notes

  • Chicken thighs can be substituted for chicken breasts for a richer flavor.
  • Add sliced jalapeños or cayenne pepper for extra heat.
  • For firmer vegetables, add the peppers during the last 1½ to 2 hours of cooking.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Freeze leftovers for up to 3 months and thaw overnight before reheating.
