Description

Crockpot Creamy Chicken and Noodles is an easy and comforting slow cooker dinner made with tender chicken, carrots, celery, onion, savory seasonings, egg noodles, and heavy cream.


Ingredients

  • 1 lb chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp oregano
  • 1/2 tsp thyme
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp minced garlic
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 small onion, diced
  • 1 (10 oz) can cream of chicken soup
  • 1 cup chicken broth
  • 8-10 oz medium egg noodles
  • 1/2 cup heavy cream
  • Dried parsley, for serving


Instructions

  1. Chop the onion, celery, and carrots. Keep the carrot pieces relatively thin so they become tender during slow cooking.
  2. Spray the crockpot with cooking spray and add the chicken breasts.
  3. Season the chicken with salt, black pepper, oregano, thyme, paprika, onion powder, and garlic powder. Add the minced garlic.
  4. Add the chopped onion, carrots, and celery. Pour the cream of chicken soup and chicken broth over the ingredients and stir everything together.
  5. Cover the crockpot and cook on low for about 6 hours, or until the chicken is fully cooked and the carrots are tender.
  6. Near the end of the cooking time, prepare the medium egg noodles according to the package directions. Drain them well.
  7. Remove the cooked chicken from the crockpot and cut it into small cubes or shred it using two forks.
  8. Return the chicken to the crockpot and stir well.
  9. Add the cooked egg noodles and heavy cream. Stir until everything is evenly combined and creamy.
  10. Top with dried parsley and season with additional salt and pepper to taste before serving.

Notes

  • Chicken thighs can be substituted for chicken breasts.
  • Medium egg noodles work especially well because they are thinner, but regular egg noodles may also be used.
  • Milk can replace the heavy cream if necessary, although the finished sauce may be less rich.
  • Cut the carrots into thin pieces so they become tender during the approximately 6-hour cooking time.
  • For a lower-sodium variation, use low-sodium chicken broth and unsalted cream of chicken soup and omit the added salt.
  • Serve with dried parsley and additional salt and pepper to taste.
