Description

Crockpot Creamy Ranch Chicken is an easy slow cooker dinner made with tender chicken breasts, potatoes, carrots, ranch seasoning, cream of chicken soup, and milk. Everything cooks together in a rich and creamy ranch sauce for a comforting family-friendly meal.

Ingredients

Scale
  • 4 boneless skinless chicken breasts
  • 4 Russet potatoes, cut into 2-inch pieces
  • 2 cups baby carrots
  • 1 packet dry ranch dressing mix
  • 1 (10 oz) can cream of chicken soup
  • 1 cup whole milk
  • Salt and black pepper, to taste

Instructions

  1. Lightly coat the inside of the slow cooker with nonstick cooking spray.
  2. Place the chicken breasts in the bottom of the slow cooker.
  3. Arrange the chopped Russet potatoes and baby carrots around the chicken.
  4. In a separate bowl, whisk together the cream of chicken soup, dry ranch dressing mix, and milk until smooth.
  5. Pour the creamy ranch mixture evenly over the chicken and vegetables.
  6. Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours, until the chicken reaches an internal temperature of 165°F and the vegetables are fork-tender.
  7. Leave the chicken breasts whole or remove and shred them with two forks, then return the shredded chicken to the slow cooker.
  8. Stir gently to coat everything with the creamy ranch sauce. Season with salt and black pepper to taste and serve warm.

Notes

  • Boneless skinless chicken thighs or chicken tenders can be substituted for chicken breasts.
  • Yukon Gold or red potatoes can be used instead of Russet potatoes.
  • If the sauce separates after cooking, remove the chicken and vegetables and whisk the sauce until smooth before returning them to the slow cooker.
  • For a thinner sauce, gradually stir in a small amount of chicken broth or milk.
  • For an extra-creamy sauce, stir softened cream cheese into the slow cooker near the end of cooking.
  • Cauliflower can replace the potatoes for a lower-carbohydrate variation.
  • Store leftovers in an airtight container in the refrigerator and reheat until hot throughout.
