Description
Crockpot Glazed Carrots are tender, buttery baby carrots slow cooked in a rich honey and brown sugar glaze. This easy slow cooker side dish is perfect for holidays or weeknight dinners, delivering sweet caramelized flavor with minimal prep.
Ingredients
Scale
- 2 pounds baby carrots
- 1/4 cup water
- 3 tablespoons packed brown sugar
- 3 tablespoons honey
- 3 tablespoons unsalted butter, cut into cubes
- 1/4 teaspoon salt
- 1 tablespoon fresh parsley, finely chopped (optional garnish)
Instructions
- Rinse the baby carrots and place them in the bottom of a 6-quart slow cooker.
- Pour 1/4 cup water evenly over the carrots to help create steam during cooking.
- Sprinkle the brown sugar over the carrots, then drizzle the honey on top.
- Distribute the cubed butter evenly throughout and sprinkle with salt.
- Cover with the lid and cook on High for 5 to 6 hours or on Low for 6 to 8 hours, until the carrots are fork tender.
- Stir once halfway through cooking if possible, keeping lid removal minimal to maintain heat.
- For a thicker glaze, remove the lid during the last 30 minutes of cooking on High to allow excess liquid to evaporate.
- Garnish with freshly chopped parsley before serving and spoon glaze over the carrots.
Notes
- If using whole carrots, peel and slice them evenly to ensure consistent cooking.
- Avoid lifting the lid frequently, as this slows down the cooking process.
- For a maple variation, substitute honey with pure maple syrup.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Reheat gently with a splash of water to loosen the glaze if needed.
