Description

Crockpot Pierogi Casserole is a creamy, cheesy slow cooker comfort dish made with tender cheddar pierogies, smoky kielbasa, and a rich cream cheese sauce. This easy one-pot meal is perfect for busy weeknights and delivers hearty, satisfying flavors with minimal prep.


Ingredients

  • 3 packages (16 oz each) frozen cheddar pierogies
  • 4 cups chicken broth
  • 8 oz cream cheese (1 block)
  • 2 cups shredded cheddar cheese
  • 1 lb kielbasa sausage, sliced
  • 1/2 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Lightly grease a 4โ€“6 quart crockpot to prevent sticking.
  2. Add 3 cups of chicken broth to the crockpot.
  3. Place frozen pierogies evenly into the crockpot.
  4. Add sliced kielbasa over the pierogies.
  5. Sprinkle 1 cup of shredded cheddar cheese on top.
  6. Cover and cook on high for 3โ€“4 hours or on low for 6 hours.
  7. About 30 minutes before done, heat cream cheese with remaining 1 cup broth until smooth.
  8. Whisk until creamy, then pour into the crockpot and gently stir.
  9. Top with remaining 1 cup cheddar cheese.
  10. Cover and cook on low for 30 more minutes until cheese is melted.
  11. Season with salt and pepper, then serve hot.

Notes

  • Do not overcook, as pierogies may become too soft.
  • Brown kielbasa beforehand for extra flavor.
  • Add a splash of broth if the sauce becomes too thick.
  • Store leftovers in an airtight container for up to 3 days.
  • Reheat gently with a bit of milk or broth to keep it creamy.
