Description

Fresh and flavorful Cucumber Chickpea Salad made with crisp cucumber, protein-rich chickpeas, red onion, feta cheese, fresh herbs, and a bright lemon vinaigrette. Ingredients

  • 1 large cucumber, halved lengthwise and sliced, or 6-8 mini Persian cucumbers
  • 1/2 small red onion, peeled and minced
  • 2 (15-ounce) cans chickpeas, rinsed and drained
  • 1/2 cup crumbled feta cheese
  • 3/4 cup fresh parsley, dill, and mint, finely chopped
  • 1/3 cup extra virgin olive oil
  • 1 teaspoon honey
  • Zest and juice of 1 small lemon
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 garlic clove, peeled and minced


Instructions

  1. Wash and slice the cucumber, mince the red onion, chop the fresh herbs, drain and rinse the chickpeas, and crumble the feta cheese.
  2. Add the cucumber, chickpeas, red onion, feta, parsley, dill, and mint to a large mixing bowl.
  3. In a separate bowl or jar, combine the olive oil, honey, lemon zest, lemon juice, red wine vinegar, oregano, salt, black pepper, and minced garlic.
  4. Whisk or shake the dressing until well combined and slightly emulsified.
  5. Pour the lemon vinaigrette over the salad ingredients shortly before serving.
  6. Toss gently until the cucumber, chickpeas, feta, onion, and herbs are evenly coated with dressing.
  7. Taste and adjust with additional salt, pepper, lemon juice, herbs, or oregano if desired.
  8. Serve immediately for the crispest texture, or chill briefly before serving.

Notes

  • English cucumber or Persian cucumbers work especially well because they have tender skins and fewer large seeds.
  • Drain the chickpeas thoroughly to prevent excess liquid from diluting the dressing.
  • For the best flavor and texture, use feta from a block and crumble it yourself.
  • If making the salad ahead, keep the dressing separate until shortly before serving so the cucumber stays crisp.
  • The dressing can be prepared up to 3 days in advance and refrigerated in a sealed container.
  • For a vegan version, use dairy-free feta and replace the honey with maple syrup.
  • Add Kalamata olives, cherry tomatoes, avocado, roasted peppers, artichokes, quinoa, couscous, or leafy greens for variation.
  • Store dressed leftovers in an airtight container in the refrigerator and enjoy within 1 day.
