- 2 (15-ounce) cans chickpeas, rinsed and drained
- 1/2 cup crumbled feta cheese
- 3/4 cup fresh parsley, dill, and mint, finely chopped
- 1/3 cup extra virgin olive oil
- 1 teaspoon honey
- Zest and juice of 1 small lemon
- 1 tablespoon red wine vinegar
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 garlic clove, peeled and minced
Instructions
- Wash and slice the cucumber, mince the red onion, chop the fresh herbs, drain and rinse the chickpeas, and crumble the feta cheese.
- Add the cucumber, chickpeas, red onion, feta, parsley, dill, and mint to a large mixing bowl.
- In a separate bowl or jar, combine the olive oil, honey, lemon zest, lemon juice, red wine vinegar, oregano, salt, black pepper, and minced garlic.
- Whisk or shake the dressing until well combined and slightly emulsified.
- Pour the lemon vinaigrette over the salad ingredients shortly before serving.
- Toss gently until the cucumber, chickpeas, feta, onion, and herbs are evenly coated with dressing.
- Taste and adjust with additional salt, pepper, lemon juice, herbs, or oregano if desired.
- Serve immediately for the crispest texture, or chill briefly before serving.
Notes
- English cucumber or Persian cucumbers work especially well because they have tender skins and fewer large seeds.
- Drain the chickpeas thoroughly to prevent excess liquid from diluting the dressing.
- For the best flavor and texture, use feta from a block and crumble it yourself.
- If making the salad ahead, keep the dressing separate until shortly before serving so the cucumber stays crisp.
