- 6 cups confectioners’ sugar (sifted)
Instructions
- Preheat the oven to 350°F (175°C) and line cupcake pans with paper liners.
- In a medium bowl, whisk the eggs lightly. Add oil, buttermilk, vinegar, vanilla, and red food coloring. Stir to combine.
- In a large bowl, sift together flour, sugar, cocoa, salt, and baking soda.
- Pour the wet ingredients into the dry ingredients and mix on medium-high speed for about 1 minute, until well combined.
- Fill each cupcake liner about 2/3 full with batter. Drop the pans gently on the counter to release air bubbles.
- Bake for 18 minutes or until a toothpick inserted into the center comes out clean.
- Remove from oven and allow cupcakes to cool completely on a wire rack before frosting.
- To make the frosting, beat cream cheese and butter together until smooth and creamy.
- Add vanilla extract, then gradually add sifted confectioners’ sugar in batches, mixing well after each addition.
- Frost the cupcakes using a piping bag fitted with a round tip (such as Ateco #807).
- Decorate with heart-shaped sprinkles and Cupid’s arrow toppers made with paper hearts and lollipop sticks.
