Description
Easter Egg Cheesecake is a festive no-bake dessert made with creamy cheesecake filling layered over a buttery cookie crumb base inside hollow chocolate Easter eggs. Decorated with mini chocolate eggs and a drizzle of melted chocolate, this easy make-ahead treat is perfect for Easter brunch or spring celebrations.
Ingredients
Scale
- 2 hollow milk chocolate Easter eggs (about 100 g / 3.5 oz each)
- 3/4 cup (75 g) graham cracker or digestive biscuit crumbs
- 2 tablespoons (30 g) butter, melted
- 1 1/2 cups (340 g) full-fat cream cheese, softened
- 1/2 cup (60 g) powdered sugar
- 3/4 cup (170 ml) heavy whipping cream, cold
- 1 teaspoon vanilla extract
- 2 tablespoons (30 g) melted chocolate for drizzle
- 1/4 cup (40 g) mini chocolate eggs for topping
- 2 tablespoons (15 g) reserved cookie crumbs for garnish
Instructions
- Unwrap the chocolate Easter eggs. Dip a sharp knife in hot water, wipe it dry, and carefully score along the seam of each egg until the two halves separate.
- Place the graham cracker or digestive biscuit crumbs in a bowl. Add the melted butter and mix until the crumbs are evenly coated and resemble wet sand.
- Divide the crumb mixture between the chocolate egg halves and gently press it down using the back of a spoon to form the base.
- Place the chocolate egg halves in the refrigerator for about 15 minutes to allow the cookie base to firm up.
- In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- In another bowl, whip the cold heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined and light in texture.
- Spoon the cheesecake filling into each chocolate egg half and smooth the tops with a spatula.
- Decorate with melted chocolate drizzle, mini chocolate eggs, and reserved cookie crumbs.
- Refrigerate the filled Easter egg cheesecakes for at least 2 hours before serving so the filling can set properly.
Notes
- Use room-temperature cream cheese to ensure a smooth cheesecake filling.
- Handle the hollow chocolate eggs gently to prevent cracking.
- Chill the dessert for at least 2 hours so the filling sets properly.
- You can substitute graham crackers with Oreos, Biscoff cookies, or shortbread for different flavors.
- Decorate just before serving to keep toppings fresh and visually appealing.
