Description

Easter Sugar Cookie Cups are soft, buttery mini cookie cups filled with a creamy vanilla cream cheese frosting and topped with festive Easter candies. These bite-sized treats are perfect for spring gatherings, easy to customize, and ideal for sharing with family and friends.

  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 8 oz cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 2 tablespoons heavy cream
  • 1/2 cup Easter candies (mini eggs or similar)
  • 2 tablespoons pastel sprinkles


Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin pan.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy, about 2–3 minutes.
  4. Add egg and vanilla extract, mixing until fully combined.
  5. Gradually add dry ingredients to the wet mixture and mix until a soft dough forms.
  6. Roll dough into 1-inch balls and place into muffin pan cavities.
  7. Press each ball gently into the center and slightly up the sides to form a cup shape.
  8. Bake for 8–10 minutes or until edges are lightly golden.
  9. Immediately press the centers down with a spoon to create a deeper cup, then cool completely.
  10. Beat cream cheese until smooth, then add powdered sugar and vanilla extract.
  11. Add heavy cream and whip until light and fluffy.
  12. Pipe or spoon filling into cooled cookie cups.
  13. Top with Easter candies and sprinkles, then chill for 30 minutes before serving.

Notes

  • Chill the dough for 20 minutes if it feels too soft to handle.
  • Do not overbake to keep the cookie cups soft and tender.
  • Use a non-stick or silicone pan for easier removal.
  • Store in an airtight container in the refrigerator for up to 3 days.
