- 1 1/2 cups powdered sugar
- 1 teaspoon vanilla extract (for filling)
- 2 tablespoons heavy cream
- 1/2 cup Easter candies (mini eggs or similar)
- 2 tablespoons pastel sprinkles
Instructions
- Preheat oven to 350°F (175°C) and grease a mini muffin pan.
- In a bowl, whisk together flour, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy, about 2–3 minutes.
- Add egg and vanilla extract, mixing until fully combined.
- Gradually add dry ingredients to the wet mixture and mix until a soft dough forms.
- Roll dough into 1-inch balls and place into muffin pan cavities.
- Press each ball gently into the center and slightly up the sides to form a cup shape.
- Bake for 8–10 minutes or until edges are lightly golden.
- Immediately press the centers down with a spoon to create a deeper cup, then cool completely.
- Beat cream cheese until smooth, then add powdered sugar and vanilla extract.
- Add heavy cream and whip until light and fluffy.
- Pipe or spoon filling into cooled cookie cups.
- Top with Easter candies and sprinkles, then chill for 30 minutes before serving.
Notes
- Chill the dough for 20 minutes if it feels too soft to handle.
- Do not overbake to keep the cookie cups soft and tender.
- Use a non-stick or silicone pan for easier removal.
- Store in an airtight container in the refrigerator for up to 3 days.
