Description

Soft and tender Easter Sugar Cookies made with butter and cream cheese for a rich, melt-in-your-mouth texture. Perfect for rolling, cutting into festive shapes, and decorating with royal icing or buttercream for a beautiful holiday treat.

Ingredients

Scale
  • 1 cup (226 g) unsalted butter, softened
  • 3 ounces (85 g) cream cheese, softened
  • 1 cup (200 g) granulated sugar
  • 1 large egg yolk, room temperature
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 1/4 cups (280 g) all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 2 cups royal icing or buttercream frosting (for decorating)
  • 1/4 cup pastel sprinkles or colored sugar (optional, for decorating)

Instructions

  1. In a large mixing bowl, cream together the softened butter, cream cheese, and granulated sugar for 5–7 minutes until light and fluffy.
  2. Beat in the egg yolk, vanilla extract, and almond extract until fully incorporated, scraping down the sides as needed.
  3. In a separate bowl, whisk together the all-purpose flour, salt, and baking soda.
  4. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Do not overmix.
  5. Cover the dough tightly and refrigerate for at least 3 hours, or until firm and easy to handle.
  6. Preheat the oven to 375°F (190°C) and lightly flour a clean work surface.
  7. Roll the chilled dough to 1/8-inch thickness (or 1/4-inch for thicker cookies) and cut into desired Easter shapes using floured cookie cutters.
  8. Place cutouts 1 inch apart on ungreased baking sheets.
  9. Bake for 8–10 minutes, or until the edges are just lightly golden.
  10. Cool on the baking sheet for 2 minutes, then transfer to wire racks to cool completely before decorating.
  11. Decorate with royal icing or buttercream frosting and add sprinkles as desired. Allow icing to set before storing.

Notes

  • Chill the dough thoroughly to prevent spreading and help cookies hold their shape.
  • For thicker, softer cookies, roll dough to 1/4 inch and increase baking time by 1–2 minutes.
  • If your kitchen is warm, chill cut-out cookies for 20 minutes before baking.
  • Store cookies in an airtight container in the refrigerator for up to 4 days.
  • Freeze undecorated or fully set decorated cookies for up to 2 months.
