Instructions

  1. Bake the Sweet Potatoes: Preheat the oven to 350°F. Wash and scrub the sweet potatoes thoroughly, then pierce them a few times with a fork to allow steam to escape. Coat each potato with oil and a sprinkle of salt. Place them on a baking sheet and bake for 60–90 minutes, or until fork-tender. Let them cool slightly before handling.
  2. Prepare the Filling: Once the sweet potatoes are cool enough to handle, slice them in half lengthwise. Carefully scoop out the flesh, leaving a thin layer inside the skins to help them hold their shape. Transfer the scooped-out sweet potato to a mixing bowl.
  3. Mix the Ingredients: Cook the bacon until crispy, then crumble it into small pieces. Add the crumbled bacon, butter, and shredded cheese to the bowl of sweet potato flesh. Stir until fully combined and creamy.
  4. Fill the Potatoes: Spoon the mixture back into the hollowed-out sweet potato skins, pressing it down slightly to create a well in the center of each one.
  5. Add the Eggs: Crack one raw egg into each well, taking care to keep the yolk intact. Season with salt and black pepper.
  6. Bake Until Set: Return the filled potatoes to the oven and bake for 15–20 minutes, or until the egg whites are set but the yolks remain slightly runny. If you prefer firmer yolks, bake for a few extra minutes.
  7. Garnish and Serve: Remove from the oven and sprinkle with minced scallions if desired. Serve hot and enjoy!
