Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 8-inch round cake pans.
- In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In a large bowl, beat the butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, beginning and ending with the dry ingredients.
- Stir in the hot water and mashed blackberries until just combined.
- Divide the batter evenly between the prepared cake pans.
- Bake for 25 to 30 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
- To make the frosting, beat the cream cheese and butter until smooth and creamy.
- Gradually add the powdered sugar and continue beating until fluffy.
- Mix in the vanilla extract and blackberry jam until fully combined.
- Place one cake layer on a serving plate and spread frosting evenly on top.
- Add the second cake layer and frost the top and sides of the cake.
- Garnish with fresh blackberries and mint leaves before serving.
