Ingredients
Scale
- 8 oz cream cheese, softened: provides the creamy, spreadable base
- 1/2 cup roasted red peppers, finely chopped and drained: adds sweetness and color
- 1/3 cup green and black olives, chopped: gives a briny, salty bite
- 1/4 cup marinated artichoke hearts, chopped: brings tanginess and texture
- 1/4 cup Parmesan cheese, grated: adds nutty, umami flavor
- 1/2 teaspoon Italian seasoning: provides a blend of Mediterranean herbs
- 1/4 teaspoon garlic powder: adds subtle warmth
- 1/4 teaspoon black pepper: enhances all the savory notes
- 1/2 cup parsley, finely chopped (for coating): adds freshness and festive green color
- Fresh rosemary sprigs and cranberries (for garnish): decorative holiday garnish
Instructions
- In a medium mixing bowl, combine the cream cheese, roasted red peppers, chopped olives, artichoke hearts, Parmesan cheese, Italian seasoning, garlic powder, and black pepper. Mix until well combined.
- Lay a large piece of plastic wrap on a flat surface. Scoop the cheese mixture onto the plastic wrap and shape it into a log. Wrap tightly and refrigerate for at least 2 hours until firm.
- Spread the chopped parsley on a large plate. Unwrap the chilled cheese log and roll it in the parsley to coat evenly.
- Transfer the cheese log to a serving platter. Garnish with rosemary sprigs and cranberries. Serve with crackers, crostini, or vegetable sticks.
Notes
- Make up to 3 days in advance and refrigerate until ready to serve.
- Drain antipasto ingredients well to avoid excess moisture in the log.
- Chill thoroughly before coating for best shape and texture.
- Use a sharp or serrated knife for clean slicing.
- Pairs well with balsamic glaze or a drizzle of olive oil.
