- 200 g brie cheese, sliced
- 6 fresh figs, sliced
- 4 large eggs
- 300 ml thickened cream
- 100 g unsalted butter, melted, plus extra for greasing

- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Instructions
- Remove the fillo pastry from the refrigerator while it is still sealed in its plastic packaging and allow it to come to room temperature.
- Preheat the oven to 180°C fan-forced. Lightly brush a 24 cm by 34 cm rectangular baking pan with butter.
- Combine the eggs, cream, salt, and black pepper in a mixing jug and whisk until smooth and well combined. Set aside.
- Place two sheets of fillo pastry on the work surface, one on top of the other, with the short sides facing you.
- Using your fingers, loosely fold the pastry back and forth into a concertina shape, then transfer it to the prepared baking pan.
- Repeat with the remaining fillo pastry until the baking pan is filled with rows of crinkled pastry.
- Drizzle the melted butter evenly over the fillo and use a pastry brush to distribute it over the exposed folds.
- Slot the sliced brie and fresh figs evenly between the pastry layers.
- Slowly pour the egg-and-cream mixture over the pastry, allowing it to settle between the crinkles while leaving the upper edges exposed.
- Sprinkle the fresh thyme evenly over the pie.
- Bake for about 35 minutes, or until the fillo pastry is crisp and golden and the custard filling is set.
- Remove from the oven and serve warm while the pastry is crisp and the brie is creamy.

- Keep the fillo pastry sealed while it comes to room temperature to help prevent the delicate sheets from drying out and cracking.
- Do not compress the concertina folds too tightly; loose folds create more crisp, golden pastry edges.
