Description

A fresh and elegant Fig Salad with Arugula & Pecans featuring ripe figs, peppery baby arugula, toasted pecans, creamy goat cheese, fresh basil, and red onion tossed with a maple-sweetened balsamic vinaigrette.


Ingredients

  • 1/4 cup red onion, thinly sliced
  • 1/2 cup pecans, toasted
  • 5 ounces baby arugula, about 6-7 cups
  • 6-8 fresh figs, stems removed and quartered
  • 10-15 fresh basil leaves, torn
  • 1/2 cup firm goat cheese, crumbled
  • 3 tablespoons olive oil
  • 2 1/2 tablespoons balsamic vinegar
  • 1-2 teaspoons maple syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon vanilla extract, optional


Instructions

  1. Thinly slice the red onion. If you prefer a milder onion flavor, soak the slices in salted water for about 15 minutes, then drain thoroughly.
  2. Place the pecans in a dry skillet over medium heat and toast for 5-6 minutes, stirring occasionally, until fragrant and lightly browned. Remove from the heat and allow to cool.
  3. Remove the stems from the fresh figs and gently cut each fig into quarters.
  4. Add the baby arugula, toasted pecans, drained red onion, and torn basil leaves to a large salad bowl.
  5. Combine the olive oil, balsamic vinegar, maple syrup, salt, black pepper, and optional vanilla extract in a small bowl or jar. Whisk or shake until well combined.
  6. Drizzle the balsamic vinaigrette over the arugula mixture and toss gently until the leaves are lightly coated.
  7. Add the quartered figs and crumbled goat cheese. Toss very gently to distribute them without crushing the figs.
  8. Taste the Fig Salad with Arugula & Pecans and adjust with additional balsamic vinegar, maple syrup, salt, or pepper if needed. Serve immediately.

Notes

  • Use ripe but still firm fresh figs so they hold their shape when tossed.
  • Keep the goat cheese very cold until serving because chilled goat cheese is easier to crumble.
  • Gorgonzola can be substituted for goat cheese for a stronger flavor.
  • Toasted walnuts can replace pecans if desired.
  • Dried figs can be used when fresh figs are unavailable; slice or quarter them before adding.
  • Baby spinach can replace some or all of the arugula for a milder flavor.
  • For make-ahead preparation, assemble the greens, pecans, onion, and basil in advance, but keep the dressing, figs, and goat cheese separate until serving.
  • Dress the salad immediately before serving to keep the arugula crisp.
