Ingredients
Scale
- 8.8 oz Thai Vermicelli rice noodles: provides a chewy, neutral base that absorbs flavors
- 2 tbsp canola oil: used for sautéing and cooking the beef and vegetables
- 1 lb beef, sliced into bite-sized pieces: adds protein and rich, meaty flavor
- 1 yellow onion, diced: adds sweetness and depth to the dish
- 6 cloves garlic, minced: adds aromatic and bold flavor
- 2 tbsp soy sauce: brings salty umami and richness
- 1 cup chicken stock: adds moisture and savory depth
- 2 cups shredded cabbage: provides crunch and freshness
- 1/2 cup sliced carrots: adds color and subtle sweetness
- 3 green onions, diced: used for freshness and garnish
- Salt and cracked pepper to taste: enhances overall flavor
Instructions
- Soak the Thai vermicelli rice noodles according to the package instructions. Drain and set aside.
- Slice the beef into bite-sized pieces and dice all vegetables, including onions, garlic, cabbage, carrots, and green onions.
- In a large wok or sauté pan, heat the canola oil over medium-high heat.
- Add the beef, diced onion, and minced garlic to the pan. Stir-fry for 3–5 minutes until beef is browned and onions are softened.
- Pour in the soy sauce and chicken stock. Stir to combine and bring to a light simmer.
- Add shredded cabbage, sliced carrots, and most of the green onions (reserve some for garnish). Stir-fry for another 3–5 minutes until vegetables are tender but still crisp.
- Add the soaked noodles to the wok. Toss everything together until noodles are evenly coated and heated through.
- Season with salt and cracked pepper to taste. Garnish with remaining green onions before serving.
- Serve hot and enjoy this delicious Filipino pancit with beef.
Notes
- Slice the beef thinly and against the grain for maximum tenderness.
- Do not overcook the rice noodles — soaking is enough to achieve the right texture.
- Use high heat to keep the vegetables crisp and the beef seared.
- To make it spicier, add chili flakes or fresh chilies during stir-fry.
- Leftovers can be stored in the fridge for up to 3 days and reheated with a splash of chicken stock or water.
