Instructions

  1. Soak the Thai vermicelli rice noodles according to the package instructions. Drain and set aside.
  2. Slice the beef into bite-sized pieces and dice all vegetables, including onions, garlic, cabbage, carrots, and green onions.
  3. In a large wok or sauté pan, heat the canola oil over medium-high heat.
  4. Add the beef, diced onion, and minced garlic to the pan. Stir-fry for 3–5 minutes until beef is browned and onions are softened.
  5. Pour in the soy sauce and chicken stock. Stir to combine and bring to a light simmer.
  6. Add shredded cabbage, sliced carrots, and most of the green onions (reserve some for garnish). Stir-fry for another 3–5 minutes until vegetables are tender but still crisp.
  7. Add the soaked noodles to the wok. Toss everything together until noodles are evenly coated and heated through.
  8. Season with salt and cracked pepper to taste. Garnish with remaining green onions before serving.
