Description

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened

  • 1 teaspoon almond extract
  • 3/4 teaspoon kosher salt
  • 1/2 cup fruit jam (strawberry, raspberry, or apricot)


Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream the butter and sugar together for 5–6 minutes until light and fluffy.
  3. Add the egg and almond extract, mixing until fully combined.
  4. In a separate bowl, whisk together the flour and salt.
  5. Gradually add the dry ingredients to the wet mixture on low speed until a soft dough forms.
  6. Roll dough into 1-ounce balls and place them 2 inches apart on the prepared baking sheet.
  7. Flatten each dough ball gently with the bottom of a glass.
  8. Use your thumb or fingertips to create flower-shaped indents around the center of each cookie.
  9. Spoon about 1 teaspoon of jam into the center of each flower design. Do not overfill.
  10. Chill the cookie tray in the refrigerator for 15–20 minutes to prevent spreading.
  11. Bake for 14–15 minutes or until the edges are lightly golden.
  12. Cool cookies on the pan for 10 minutes before transferring to a wire rack to cool completely.
