Description

French Cream of Chestnut Soup is a silky, elegant French soup made with tender chestnuts, sweet onion, savory stock, cream, butter, and warm nutmeg. Also known as potage aux marrons, this comforting seasonal soup is ideal for autumn dinners, winter meals, and holiday entertaining.

Ingredients

Scale
  • 1.5 lb Italian chestnuts, or 15 oz roasted peeled chestnuts
  • 4 tbsp unsalted butter
  • 6 oz yellow sweet onion, diced (about 1 medium onion)
  • 4 cups chicken stock or vegetable stock
  • 1/2 cup heavy cream or half-and-half
  • 1/4 cup Marsala wine or sherry, optional
  • Kosher salt, to taste
  • Freshly grated nutmeg, to taste
  • 2 whole cloves, optional
  • 1 dried bay leaf, optional
  • 2 small fresh thyme sprigs, optional
  • Crème fraîche or sour cream, as needed for garnish
  • Fresh chives or parsley, sliced, as needed for garnish
  • Maple syrup, a small splash to taste, optional

Instructions

  1. Place each fresh chestnut flat-side down and carefully score an X through the shell. Alternatively, cut the chestnuts in half.
  2. Place the chestnuts in a 12-inch skillet with 1 cup of water. Cover, bring to a boil, reduce the heat to medium, and steam for 5 minutes.
  3. Remove a few chestnuts from the skillet at a time and peel them while warm, keeping the remaining chestnuts covered so they stay warm and easy to peel.
  4. Set aside about 10 oz of peeled chestnuts for the soup. Reserve approximately 5 oz and cut them into bite-size pieces for garnishing.
  5. Melt the butter in a 3-quart soup pot over medium heat. Add the diced onion and cook for 5 to 7 minutes, until soft and translucent without significant browning.
  6. Add the Marsala or sherry, if using, and cook until the liquid has almost completely evaporated.
  7. Add the chicken or vegetable stock, chestnuts, cloves, bay leaf, and thyme. Cover, bring to a gentle simmer, and cook for 20 minutes.
  8. Remove and discard the cloves, bay leaf, and thyme sprigs.
  9. Puree the soup in a blender, working in batches if necessary, or use an immersion blender. Blend until completely smooth and velvety.
  10. Stir in the heavy cream or half-and-half. Season with kosher salt, freshly grated nutmeg, and an optional small splash of maple syrup.
  11. If the French Cream of Chestnut Soup is thicker than desired, add a little extra warm stock or cream until it reaches the preferred consistency.
  12. Serve warm in small bowls. Garnish with chopped chestnuts, crème fraîche or sour cream, and sliced chives or parsley.

Notes

  • Fresh chestnuts are easiest to peel while they are still warm. Keep unpeeled chestnuts covered while working.
  • Vacuum-packed or jarred cooked chestnuts can be used to save preparation time.
  • For a richer French Cream of Chestnut Soup, double the amount of cream.
  • For a vegetarian version, use vegetable stock instead of chicken stock.
  • For a porcini variation, add 1/2 oz dried porcini mushrooms to the stock and add extra stock or cream if the soup becomes too thick.
  • Caramelized onions can replace the softly cooked onions for a sweeter, deeper flavor.
  • For an especially smooth restaurant-style texture, strain the blended soup through a fine-mesh sieve.
  • A 6- to 8-ounce portion is ideal when serving the soup as an appetizer or first course.
  • Reheat gently over low to medium-low heat and avoid boiling after the cream has been added.
