  • 1 teaspoon Dijon mustard
  • 2 teaspoons fresh thyme

  • ½ teaspoon black pepper
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cayenne, optional
  • 1 cup heavy cream
  • 1 cup French fried onions, optional


Instructions

  1. Bring a large pot of salted water to a boil. Drop the green beans into the boiling water and blanch for 2 minutes. Immediately transfer to an ice bath for 20 seconds, then drain and pat dry.
  2. In a large skillet, melt butter over medium heat. Add shallots, garlic, and mushrooms. Sauté for 5 minutes until softened and aromatic.
  3. Stir in the flour and cook for 1-2 minutes to create a roux. Then, stir in the vegetable stock and cook until the sauce thickens slightly.
  4. Stir in Dijon mustard, thyme, salt, pepper, nutmeg, and cayenne. Reduce heat to low and gradually whisk in the cream. Continue cooking until the sauce thickens enough to coat the back of a spoon.
  5. Toss the blanched green beans in the sauce until fully coated. Transfer the mixture to a baking dish and bake uncovered at 375°F for 20 minutes.
  6. If desired, top with French fried onions and bake for an additional 10 minutes until the onions are golden brown and crispy.

  • Blanching the green beans is essential to keep them crisp and vibrant.
  • Prepare the casserole up to 48 hours in advance. Refrigerate until ready to bake.
  • For a lighter version, substitute half-and-half or whole milk for the heavy cream.
