Instructions
- In a large bowl, whisk together the flour, salt, sugar, cinnamon, and baking powder.
- In a separate bowl, whisk the eggs, milk, and melted butter until smooth.
- Combine the wet and dry ingredients, stirring until just combined.
- Fold in the diced fresh peaches.
- Heat oil in a deep frying pan or fryer to 375°F (190°C).
- Drop spoonfuls of batter into the hot oil and fry for 2-3 minutes, turning occasionally, until golden brown.
- Remove fritters from the oil and drain on paper towels.
- For the glaze, whisk together powdered sugar and enough milk to reach a drizzling consistency.
- Drizzle the fritters with the glaze or coat them in sugar.
Notes
- If you don’t have fresh peaches, frozen peaches can be used. Thaw and drain them before adding to the batter.
