Description

Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 2 tablespoons white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 2 eggs
  • 1/3 cup milk
  • 1 tablespoon melted butter
  • 1 1/4 cups diced fresh peaches
  • Oil for frying
  • 1 cup powdered sugar (for glaze)
  • Milk (for glaze)


Instructions

  1. In a large bowl, whisk together the flour, salt, sugar, cinnamon, and baking powder.
  2. In a separate bowl, whisk the eggs, milk, and melted butter until smooth.
  3. Combine the wet and dry ingredients, stirring until just combined.
  4. Fold in the diced fresh peaches.
  5. Heat oil in a deep frying pan or fryer to 375°F (190°C).
  6. Drop spoonfuls of batter into the hot oil and fry for 2-3 minutes, turning occasionally, until golden brown.
  7. Remove fritters from the oil and drain on paper towels.
  8. For the glaze, whisk together powdered sugar and enough milk to reach a drizzling consistency.
  9. Drizzle the fritters with the glaze or coat them in sugar.

Notes

  • If you don’t have fresh peaches, frozen peaches can be used. Thaw and drain them before adding to the batter.
  • For a lighter version, you can bake the fritters in the oven at 375°F (190°C) for 15-18 minutes.
  • Store any leftovers in an airtight container at room temperature for up to two days.
  • To make the glaze, add powdered sugar to a bowl and slowly add milk until you reach the desired consistency.
