Ingredients
Scale
- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (15 ounces) chili beans, undrained
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 can (8 ounces) tomato sauce
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups Fritos corn chips
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup sliced black olives (optional)
- 1/4 cup chopped fresh cilantro (optional)
Instructions
- Heat a large skillet over medium heat and cook the ground beef until browned, breaking it apart with a spoon as it cooks. Drain excess grease.
- Add the chopped onion and minced garlic to the skillet and sauté for 3 to 4 minutes until softened and fragrant.
- Stir in the chili beans, diced tomatoes with green chilies, tomato sauce, chili powder, cumin, salt, and black pepper.
- Bring the chili mixture to a simmer and cook for 10 to 15 minutes, stirring occasionally, until thickened and flavorful.
- Spread a layer of Fritos corn chips into serving bowls or plates.
- Spoon the hot chili mixture evenly over the corn chips.
- Top with shredded cheddar cheese and allow it to melt slightly from the heat.
- Finish with sour cream, green onions, black olives, and cilantro if desired. Serve immediately while warm and crunchy.
Notes
- Serve immediately to keep the corn chips crunchy.
- Use freshly shredded cheese for smoother melting.
- Add jalapeños or hot sauce for extra spice.
- The chili mixture can be made ahead and refrigerated for up to 4 days.
- Store leftover chili separately from the chips to avoid sogginess.
- Ground turkey or plant-based meat can be substituted for ground beef.
