Description

Ingredients

  • 2 cans (15 ounces each) whole kernel corn, drained well
  • 1 medium red bell pepper, finely diced
  • 2 cups shredded Mexican blend cheese
  • 1 cup mayonnaise
  • 1/4 teaspoon black pepper
  • 1 bag (9.25 ounces) Chili Cheese Fritos, lightly crushed
  • 2 tablespoons fresh cilantro, chopped for garnish


Instructions

  1. Drain the canned corn thoroughly and place it into a large mixing bowl.
  2. Add the diced red bell pepper, shredded Mexican blend cheese, mayonnaise, and black pepper to the bowl.
  3. Stir all the ingredients together until evenly coated in the creamy dressing.
  4. Right before serving, gently fold in the lightly crushed Chili Cheese Fritos to keep them crunchy.
  5. Garnish the salad with fresh chopped cilantro if desired.
  6. Serve immediately for the best flavor and texture.

Notes

  • Add the Fritos just before serving to prevent them from becoming soggy.
  • You can substitute regular Fritos if Chili Cheese Fritos are unavailable.
