Soft and warmly spiced pumpkin sugar cookies made with pumpkin butter and brown sugar, rolled in cinnamon sugar, then finished with creamy vanilla cream cheese frosting and festive fall sprinkles.

  • 4 tablespoons salted butter, at room temperature
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract, for frosting
  • Fall sprinkles, for decorating


Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Beat the softened butter, brown sugar, and vanilla until light and fluffy. Mix in the pumpkin butter and egg until evenly combined.
  3. Add the flour, baking soda, cinnamon, nutmeg, and salt. Mix just until a soft cookie dough forms, taking care not to overmix.
  4. Combine the granulated sugar and cinnamon in a shallow bowl.
  5. Scoop the cookie dough into rounded balls and roll each ball in the cinnamon sugar mixture.
  6. Arrange the dough balls on the prepared baking sheets, leaving space between each cookie.
  7. Bake until the edges are set but the centers remain soft, about 8-12 minutes. Avoid overbaking if you want soft pumpkin sugar cookies.
  8. Allow the cookies to cool briefly on the baking sheet, then transfer them to a wire rack and cool completely before frosting.
  9. For the frosting, beat the cream cheese and softened butter until smooth and creamy. Gradually beat in the powdered sugar and vanilla until fluffy and spreadable.
  10. Spread the cream cheese frosting over the completely cooled cookies. Decorate with fall sprinkles and serve.
