Instructions
- In a mixing bowl, combine 1 1/2 cups graham cracker crumbs with 4 ounces melted butter and mix until evenly coated. Set aside.
- In a large bowl, beat 8 ounces softened cream cheese with an electric mixer until smooth and lump-free.
- Add 14 ounces sweetened condensed milk to the cream cheese and mix until fully combined and creamy.
- Pour in 3/4 cup key lime juice and mix until the filling thickens slightly.
- Gently fold in 8 ounces whipped topping until smooth and fluffy with no streaks remaining.
- Line a muffin tin with silicone or paper liners and fill each about 3/4 full with the filling.
- Top each portion with the prepared graham cracker mixture, pressing lightly to form a crust.
- Place in the freezer for at least 4 hours or until fully set.
- Remove from molds by dipping the bottom briefly in warm water, then gently unmold.
- Serve crust-side down and garnish with whipped topping and lime slices if desired.
