- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup packed light brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 (8 ounce) package low-fat cream cheese
- 2-3 tablespoons maple syrup or honey (or 1 cup powdered sugar)
- 1 teaspoon vanilla extract (for frosting)
- Pinch of fine sea salt (for frosting)
- Fresh fruit (strawberries, blueberries, raspberries, kiwi, blackberries, etc.)
- Optional: honey for drizzling
Instructions
- Preheat the oven to 350°F and grease a 9×13-inch baking dish, quarter sheet pan, or 12-inch pizza pan.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream together the butter and brown sugar until light and fluffy.
- Add the egg, vanilla extract, and almond extract. Mix until fully combined.
- Add the dry ingredients to the wet mixture and mix until just combined. Do not overmix.
- Press the dough evenly into the prepared pan. Poke with a fork to prevent bubbling. Bake for 15–18 minutes, until lightly golden.
- Let the cookie crust cool completely on a wire rack.
- In a medium bowl, whisk together the cream cheese, maple syrup or honey, vanilla extract, and sea salt until smooth.
- Spread the frosting evenly over the cooled crust.
- Top with sliced fresh fruit and drizzle with honey if desired. Slice and serve immediately.
Notes
- Chill the dough for 10 minutes before pressing to make handling easier.
- Use wet fingers to prevent sticking when pressing the dough.
- Serve shortly after decorating to avoid sogginess from the fruit.
- Store leftovers in an airtight container in the fridge for up to 48 hours.
