Description

This easy fruit pizza recipe features a soft brown sugar cookie crust, a luscious cream cheese frosting, and an assortment of fresh fruits. Perfect for summer gatherings, it’s colorful, refreshing, and endlessly customizable.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 (8 ounce) package low-fat cream cheese
  • 2-3 tablespoons maple syrup or honey (or 1 cup powdered sugar)
  • 1 teaspoon vanilla extract (for frosting)
  • Pinch of fine sea salt (for frosting)
  • Fresh fruit (strawberries, blueberries, raspberries, kiwi, blackberries, etc.)
  • Optional: honey for drizzling


Instructions

  1. Preheat the oven to 350°F and grease a 9×13-inch baking dish, quarter sheet pan, or 12-inch pizza pan.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add the egg, vanilla extract, and almond extract. Mix until fully combined.
  5. Add the dry ingredients to the wet mixture and mix until just combined. Do not overmix.
  6. Press the dough evenly into the prepared pan. Poke with a fork to prevent bubbling. Bake for 15–18 minutes, until lightly golden.
  7. Let the cookie crust cool completely on a wire rack.
  8. In a medium bowl, whisk together the cream cheese, maple syrup or honey, vanilla extract, and sea salt until smooth.
  9. Spread the frosting evenly over the cooled crust.
  10. Top with sliced fresh fruit and drizzle with honey if desired. Slice and serve immediately.

Notes

  • Chill the dough for 10 minutes before pressing to make handling easier.
  • Use wet fingers to prevent sticking when pressing the dough.
  • Serve shortly after decorating to avoid sogginess from the fruit.
  • Store leftovers in an airtight container in the fridge for up to 48 hours.
