Ingredients
Scale
- 1 pound chopped candied fruit
- 1 1/2 cups all-purpose flour, divided
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1 1/2 teaspoons baking soda
- 1/2 cup unsalted butter, softened
- 1/2 cup packed brown sugar
- 2 large eggs
- 1 1/2 tablespoons milk
- 1/2 cup unfiltered apple juice or orange juice
- 3 cups chopped pecans
- 6 ounces golden raisins (about 1 1/4 cups)
Instructions
- Preheat the oven to 325°F (163°C). Line baking sheets with parchment paper and set aside.
- In a medium bowl, combine the chopped candied fruit with a few tablespoons of the measured flour. Stir to coat the fruit and help prevent the pieces from sticking together. Set aside.
- In another bowl, whisk together the remaining flour, ground cloves, nutmeg, cinnamon, and baking soda until evenly combined.
- Using a hand mixer or stand mixer, cream the softened butter and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing after each addition. Blend in the milk and apple juice until combined.
- Add the dry ingredients to the wet mixture and mix until incorporated. Fold in the chopped pecans, flour-coated candied fruit, and golden raisins. The batter will be thinner than traditional cookie dough, almost like cake batter; this is normal.
- Drop spoonfuls of batter onto the prepared baking sheets, spacing them about 1 inch apart. Gently flatten rounded portions with a spatula because the cookies will not spread much during baking.
- Bake for 18–20 minutes, or until the cookies are golden brown and set.
- Let the cookies cool on the baking sheets for 2 minutes before transferring them to a wire rack to cool completely.
- Serve once cooled, or store in an airtight container to allow the fruity flavors and warm spices to develop over the next few days.
Notes
- Use diced candied fruit mix containing candied cherries, pineapple, and citrus peel for traditional holiday flavor.
- Coating the sticky candied fruit with a few tablespoons of flour helps distribute it evenly throughout the batter.
- The batter is naturally thin and soft. Avoid adding extra flour simply because it looks different from conventional cookie dough.
- Orange juice can be substituted for apple juice for a brighter citrus flavor.
- For a variation, brandy, rum, or whiskey can replace the fruit juice, although this changes the flavor profile.
- Walnuts can replace pecans if desired.
- Store completely cooled cookies in an airtight container at room temperature for up to 2 weeks.
- Freeze the cookies in airtight freezer-safe bags or containers for up to 3 months for the best quality. Thaw at room temperature before serving.
- The recipe makes approximately 60 cookies, depending on the size of each spoonful.
