Description

Funfetti Cake Mix Cookies are soft, colorful cookies made with boxed funfetti cake mix, eggs, and oil for a quick and easy dessert. These cake-like cookies are filled with rainbow sprinkles and chocolate candies, making them perfect for birthdays, parties, holidays, or anytime you want a cheerful homemade treat ready in under 30 minutes.


Ingredients

  • 1 box (15.25 oz / 432 g) Funfetti cake mix
  • 2 large eggs
  • 1/3 cup (80 ml) vegetable oil
  • 3 tablespoons rainbow sprinkles
  • 1/3 cup (60 g) M&M candies


Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the funfetti cake mix, eggs, and vegetable oil.
  3. Stir the mixture with a wooden spoon or spatula until a thick cookie dough forms and all ingredients are fully combined.
  4. Add the rainbow sprinkles and M&M candies to the dough and gently fold them in until evenly distributed.
  5. Scoop the dough and roll into 1-inch balls, then place them on the prepared baking sheet about 2 inches apart.
  6. Press a few additional M&M candies or sprinkles onto the tops of the dough balls if desired.
  7. Bake the cookies for 6–7 minutes, or until the edges are just set and the tops begin to crack slightly.
  8. Remove the cookies from the oven and allow them to cool on the baking sheet for 3–5 minutes.
  9. Transfer the cookies to a wire rack and allow them to cool completely before serving.

Notes

  • Do not overbake the cookies to maintain their soft, cake-like texture.
  • If the dough feels sticky, chill it in the refrigerator for 15 minutes before shaping.
  • You can replace M&M candies with 1/3 cup white chocolate chips for a different flavor.
  • If funfetti cake mix is unavailable, use white cake mix and add 3 tablespoons rainbow sprinkles.
  • Store cookies in an airtight container at room temperature for up to 5 days.
