- 4 cups mixed salad greens (lettuce, arugula, spinach)
- 1 cup cherry tomatoes (halved)
- 1 medium cucumber (sliced)
- 1/4 red onion (thinly sliced)
- 1/2 cup bell peppers (sliced)
- 3 tbsp olive oil
- 2 tbsp fresh lemon juice
- 2 cloves garlic (minced)
- 2 tbsp fresh parsley or basil (chopped)
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Clean the calamari thoroughly under cold water, pat dry, and slice into rings.
- Heat 1 tablespoon olive oil in a pan over medium-high heat and cook the calamari for 1–2 minutes until opaque and tender. Remove from heat immediately.
- Wash and prepare the vegetables by chopping greens, halving tomatoes, slicing cucumber, onion, and bell peppers.
- In a small bowl, whisk together remaining olive oil, lemon juice, minced garlic, salt, and black pepper to make the dressing.
- In a large bowl, combine all the vegetables and toss gently.
- Add the warm calamari to the salad and mix lightly.
- Pour the dressing over the salad and toss to coat evenly.
- Garnish with fresh herbs and adjust seasoning if needed.
- Serve immediately for best flavor and texture.
Notes
- Do not overcook calamari as it can become rubbery.
- Use fresh, crisp vegetables for best taste and texture.
- You can chill the calamari before adding for a cold salad version.
- Add chili flakes for a spicy variation.
- Store dressing separately if making ahead.
