Description

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup milk
  • 1 large egg
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup marinara sauce
  • 1/4 cup shredded mozzarella cheese


Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease a baking sheet or line it with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, milk, egg, parsley, Italian seasoning, salt, and black pepper.
  3. Mix the ingredients gently until just combined, being careful not to overmix.
  4. Divide the mixture into 4 equal portions and shape each portion into a small loaf.
  5. Place the mini meatloaves on the prepared baking sheet.
  6. Top each meatloaf with marinara sauce and sprinkle evenly with shredded mozzarella cheese.
  7. Bake for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C).
  8. Remove from the oven and let the meatloaves rest for 5 minutes before serving.
