Instructions
- Preheat the oven to 375°F (190°C) and lightly grease a baking sheet or line it with parchment paper.
- In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, minced garlic, milk, egg, parsley, Italian seasoning, salt, and black pepper.
- Mix the ingredients gently until just combined, being careful not to overmix.
- Divide the mixture into 4 equal portions and shape each portion into a small loaf.
- Place the mini meatloaves on the prepared baking sheet.
- Top each meatloaf with marinara sauce and sprinkle evenly with shredded mozzarella cheese.
- Bake for 25 to 30 minutes, or until the internal temperature reaches 165°F (74°C).
- Remove from the oven and let the meatloaves rest for 5 minutes before serving.
