Instructions
- Preheat the oven to 400°F (200°C).
- Wash the potatoes thoroughly and cut them into halves or quarters, keeping the pieces similar in size for even cooking.
- Place the potatoes in a large mixing bowl. Add the olive oil, kosher salt, black pepper, and minced garlic.
- Toss until all of the potatoes are evenly coated with the seasonings.
- Spread the potatoes in a single layer on a large baking sheet or sheet pan.
- Roast for 45 to 60 minutes, turning the potatoes twice during cooking to ensure even browning and crispy edges.
- Cook until the potatoes are golden brown on the outside and fork-tender inside.
- Remove from the oven and immediately toss with the minced fresh parsley.
