Description

  • 3 pounds small red or white potatoes, washed and cut into halves or quarters
  • 1/4 cup extra virgin olive oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons minced fresh garlic (about 6 cloves)
  • 2 tablespoons minced fresh parsley


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the potatoes thoroughly and cut them into halves or quarters, keeping the pieces similar in size for even cooking.
  3. Place the potatoes in a large mixing bowl. Add the olive oil, kosher salt, black pepper, and minced garlic.
  4. Toss until all of the potatoes are evenly coated with the seasonings.
  5. Spread the potatoes in a single layer on a large baking sheet or sheet pan.
  6. Roast for 45 to 60 minutes, turning the potatoes twice during cooking to ensure even browning and crispy edges.
  7. Cook until the potatoes are golden brown on the outside and fork-tender inside.
  8. Remove from the oven and immediately toss with the minced fresh parsley.
  9. Taste and adjust seasoning with additional salt and pepper if needed.
