Description

A creamy and refreshing Gingerbread Iced Latte made with espresso, milk, homemade gingerbread syrup, dark molasses, ginger, cinnamon, and cloves. Finished with whipped cream and cinnamon, it is an easy festive coffee drink packed with classic holiday flavors.


Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • 2 tablespoons dark molasses (not blackstrap)
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 2 shots espresso or 1/2 cup strong brewed coffee
  • 1-2 cups ice
  • 1 cup oat milk or milk of choice
  • 1-2 tablespoons gingerbread coffee syrup, to taste
  • Whipped cream, for topping
  • Ground cinnamon, for topping


Instructions

  1. Add the granulated sugar, water, dark molasses, ground ginger, cinnamon, and cloves to a small saucepan.
  2. Place over high heat and bring to a boil, stirring occasionally until the sugar has completely dissolved.
  3. Remove the gingerbread syrup from the heat and allow it to cool until it is safe to handle.
  4. Place a fine-mesh strainer over a clean jar or container. For an extra-smooth syrup, line the strainer with cheesecloth. Strain the syrup and set aside.
  5. Brew 2 shots of espresso or prepare 1/2 cup of strong brewed coffee. Let it cool briefly to reduce ice melting.
  6. Pour the espresso into a 16-ounce or larger glass.
  7. Add 1 cup of milk and 1 tablespoon of gingerbread syrup. Stir thoroughly, taste, and add another tablespoon of syrup if desired.
  8. Add 1-2 cups of ice and stir again until the latte is thoroughly chilled.
  9. Top with whipped cream and a sprinkle of ground cinnamon. Serve immediately.

Notes

  • Use dark molasses rather than blackstrap molasses, which can taste too strong and bitter in this drink.
  • Allow freshly brewed espresso to cool slightly before adding ice to prevent the latte from becoming watery.
  • Full-fat oat milk creates an especially creamy dairy-free Gingerbread Iced Latte.
  • Whole dairy milk can be used for a rich traditional latte.
  • For a vegan version, use plant-based milk and dairy-free or coconut whipped cream.
  • Strong brewed coffee can replace espresso if you do not have an espresso machine.
  • Start with 1 tablespoon of gingerbread syrup and add more according to your preferred sweetness and spice level.
