Description

Moist and tender Gluten Free Chocolate Chip Zucchini Muffins made with shredded zucchini, ripe bananas, warm cinnamon, dark chocolate chips, and optional walnuts. These easy one-bowl muffins are naturally sweetened in part with banana and are perfect for breakfast, snacks, meal prep, or freezing.


Ingredients

  • 1 1/2 cups (240 g) 1-to-1 gluten-free baking flour
  • 1/3 cup brown sugar or coconut sugar
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 teaspoon apple cider vinegar
  • 2 medium ripe bananas, mashed, about 200 g
  • 1 1/2 cups (160 g) shredded zucchini
  • 1 large egg
  • 3 tablespoons olive oil or avocado oil
  • 1 teaspoon pure vanilla extract
  • 1/2 cup dark chocolate chips or morsels
  • 1/3 cup chopped walnuts, optional


Instructions

  1. Preheat the oven to 350°F (175°C) and line a 12-cup muffin pan with paper liners.
  2. Place the shredded zucchini between layers of paper towel or a clean kitchen towel and gently press out some of the excess moisture without squeezing it completely dry.
  3. In a large mixing bowl, combine the gluten-free flour, brown sugar, cinnamon, baking powder, baking soda, sea salt, apple cider vinegar, mashed bananas, shredded zucchini, egg, oil, vanilla extract, chocolate chips, and walnuts.
  4. Stir just until the ingredients are evenly combined. Avoid overmixing.
  5. Divide the batter evenly among the 12 prepared muffin cups.
  6. If desired, top each muffin with a few additional chocolate chips or chopped walnuts.
  7. Bake for 18 to 22 minutes, beginning to check at 18 minutes. The muffins are done when a toothpick inserted into the center comes out clean or with a few moist crumbs and the tops spring back lightly when pressed.
  8. Remove the pan from the oven and let the muffins cool for 5 to 10 minutes.
  9. Transfer the muffins to a wire rack and allow them to cool completely for the best gluten-free texture.

Notes

  • Use very ripe bananas with plenty of brown spots for the best sweetness and moisture.
  • Do not completely dry the shredded zucchini; removing only the excess moisture helps keep the muffins tender.
  • A 1-to-1 gluten-free baking flour works best. Regular all-purpose flour may also be used if gluten is not a concern.
  • If using regular all-purpose flour, the apple cider vinegar may be omitted.
  • Coconut flour is not recommended as a 1-to-1 substitute because it absorbs much more liquid.
  • Almond flour may result in muffins that are wetter and denser.
  • Omit the walnuts for a nut-free version.
  • Store cooled muffins in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
  • For serving after storage, microwave a muffin for 15 to 20 seconds for a warm, soft texture.
