Ingredients
Scale
- 2 tablespoons olive oil: for sautéing vegetables and adding richness
- 2 leeks, sliced: for a mild onion flavor and aromatic base
- 2 carrots, peeled and chopped: for natural sweetness and color
- 2 celery stalks, chopped: for fresh savory flavor
- 3 garlic cloves, minced: for depth and aroma
- 4 medium golden beets, peeled and chopped: the main ingredient providing sweetness and golden color
- 8 cups chicken broth: for a rich and flavorful soup base
- 2 cups water: to adjust soup consistency
- 3 medium potatoes, peeled and chopped: for heartiness and texture
- 1 bell pepper, chopped: for sweetness and freshness
- 1 medium zucchini, chopped: for a tender vegetable texture
- Salt, to taste: to enhance flavors
- Black pepper, to taste: for seasoning
- Fresh parsley, dill, or green onions: for freshness and garnish
- Sour cream, for serving: for a creamy traditional topping
- Lemon juice, optional: for brightness and flavor balance
Instructions
- Heat olive oil in a large pot over medium heat. Add sliced leeks and cook for about 3 minutes until softened and fragrant.
- Add carrots, celery, and garlic. Cook for 3 to 5 minutes, stirring occasionally, until the vegetables begin to soften.
- Add chopped golden beets, season with salt and pepper, and sauté briefly to develop their flavor.
- Pour in part of the chicken broth and bring the mixture to a boil. Reduce heat, cover partially, and simmer until the golden beets begin to soften.
- Add the remaining broth and water, then bring the soup back to a gentle boil.
- Add potatoes and simmer until they begin to become tender.
- Add bell pepper and continue cooking until the potatoes and golden beets are fully tender.
- Add zucchini during the final minutes of cooking and simmer until just tender.
- Adjust seasoning with salt, pepper, and lemon juice if desired. Stir in fresh herbs and serve warm with sour cream.
Notes
- Golden beets can be replaced with red beets, but the color and flavor will change.
- Use vegetable broth instead of chicken broth to make a vegetarian version.
- For a creamier texture, blend part or all of the soup with an immersion blender.
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- Freeze cooled soup in freezer-safe containers for longer storage.
