Description

A deliciously melty and protein-rich Grilled Cheese Paneer and Corn Sandwich made with Indian paneer, sweet corn, cheese slices, and aromatic spices. Perfect for breakfast, lunchboxes, or a quick snack, this sandwich is grilled to crispy perfection and bursting with flavor.


Ingredients

  • 1 cup paneer, grated
  • 1/2 cup sweet corn (frozen or fresh)
  • 1 small onion, finely chopped (or 1/4 of a large onion)
  • 1 garlic clove, finely chopped
  • 1 teaspoon kasuri methi (dried fenugreek leaves), crushed
  • 1/8 teaspoon red chili powder (or to taste)
  • Salt, to taste
  • Black pepper, to taste
  • 3/4 tablespoon oil
  • 23 tablespoons salted butter, melted
  • 1 tablespoon fresh coriander leaves, finely chopped
  • 4 slices of whole wheat bread (or bread of choice)
  • 2 slices of cheese (any kind, e.g., processed, cheddar)


Instructions

  1. Heat 3/4 tablespoon oil in a pan over medium heat. Add chopped onion and garlic, and sauté for 2 minutes until the raw smell disappears.
  2. Add grated paneer, sweet corn, crushed kasuri methi, red chili powder, salt, and pepper. Mix well and cook for another 2 minutes. Remove from heat.
  3. In a small bowl, mix melted butter with chopped coriander leaves.
  4. Spread the butter-coriander mix on two slices of bread.
  5. Evenly layer the paneer-corn mixture onto the buttered bread slices.
  6. Top the filling with cheese slices and cover with the remaining bread slices.
  7. Heat a grill pan on medium heat and add a small amount of butter.
  8. Place the sandwiches on the pan and grill until golden brown on both sides with clear grill marks.
  9. Remove from heat, slice, and serve hot with ketchup or chutney.

Notes

  • Use fresh homemade paneer for better texture and taste.
  • Soak frozen corn in hot water before using.
  • You can grill this in a sandwich maker or regular pan if a grill pan isn’t available.
