  • 1/2 teaspoon black pepper
  • 6 ears fresh sweet corn, kernels removed
  • 2 green onions, thinly sliced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup sour cream
  • 2 tablespoons fresh lime juice
  • 1 tablespoon lime zest
  • 1/2 teaspoon salt (for salad)
  • 1/4 teaspoon black pepper (for salad)


Instructions

  1. In a bowl, whisk together olive oil, lemon juice, hot honey, lemon zest, minced garlic, salt, and pepper until well combined.
  2. Place the chicken thighs in a dish or resealable bag and pour the marinade over them. Coat evenly and refrigerate for at least 30 minutes or up to overnight.
  3. Preheat the grill to high heat and lightly oil the grates.
  4. Remove chicken from the marinade and place it on the grill. Cook for 5 minutes without moving.
  5. Flip the chicken and grill for another 5 to 6 minutes until the internal temperature reaches 165°F (75°C).
  6. Transfer the chicken to a plate and let it rest for 5 to 10 minutes. Drizzle with additional hot honey.
  7. In a large bowl, combine corn kernels, green onions, and chopped cilantro.
  8. In a separate bowl, whisk together sour cream, lime juice, lime zest, salt, and pepper.
  9. Pour the dressing over the corn mixture and toss until evenly coated.
  10. Serve the grilled hot honey chicken alongside the sweet corn salad and enjoy.
