Description

Grilled Nectarine & Cheese Crostini is a fresh and elegant summer appetizer featuring crispy grilled baguette slices topped with creamy goat cheese, sweet grilled nectarines, fragrant basil, and a rich balsamic reduction. Ingredients

  • 1/2 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 12 slices French bread baguette (1/4-inch thick)
  • 2 medium nectarines, halved
  • 1/4 cup fresh goat cheese, softened
  • 1/4 cup fresh basil leaves, thinly sliced


Instructions

  1. Pour 1/2 cup balsamic vinegar into a small saucepan and bring to a boil over medium heat. Cook for 10–15 minutes, stirring occasionally, until reduced to about 3 tablespoons and syrupy. Remove from heat and let cool.
  2. Brush both sides of the 12 baguette slices with 1 tablespoon olive oil.
  3. Preheat a grill to medium heat. Grill the baguette slices until golden brown and crisp on both sides, about 1–2 minutes per side.
  4. Place the 2 halved nectarines on the grill and cook for 45–60 seconds per side until lightly browned and tender.
  5. Remove the nectarines from the grill and allow them to cool slightly. Slice into thick wedges.
  6. Spread 1/4 cup softened goat cheese evenly across the grilled baguette slices.
  7. Arrange the grilled nectarine slices on top of the goat cheese.
  8. Drizzle the balsamic reduction over each crostini.
  9. Sprinkle with 1/4 cup thinly sliced fresh basil leaves.
  10. Serve immediately while the bread remains crisp.

Notes

  • Use ripe but firm nectarines for the best texture after grilling.
  • The balsamic reduction can be prepared up to 3 days in advance.
  • Assemble the crostini just before serving to prevent soggy bread.
  • Peaches can be substituted for nectarines if desired.
  • Ricotta or burrata cheese can be used instead of goat cheese for a milder flavor.
