Description

Grilled Shrimp with Mango Lime and Radish Salsa is a fresh, vibrant seafood dish featuring smoky grilled shrimp topped with a sweet, tangy, and slightly spicy salsa made from ripe mango, zesty lime, and crisp radishes. Perfect for a quick, healthy, and flavorful meal.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 ripe mangoes, peeled, pitted, and diced
  • 1 cup radishes, thinly sliced (about 1 bunch)
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, zested and juiced
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 wooden skewers, soaked in water for 30 minutes

Instructions

  1. Preheat the grill to medium-high heat to ensure even cooking and a slight char on the shrimp.
  2. In a large bowl, toss the shrimp with olive oil, ground cumin, salt, and black pepper until evenly coated.
  3. Thread the shrimp onto soaked wooden skewers for easy handling during grilling.
  4. Place the shrimp skewers on the grill and cook for 2–3 minutes per side until the shrimp turn pink and opaque. Avoid overcooking.
  5. In a medium bowl, combine diced mango, sliced radishes, chopped cilantro, lime zest, and lime juice.
  6. Add red pepper flakes if desired and gently toss the salsa to combine all ingredients.
  7. Remove the shrimp from the grill and transfer to a serving platter.
  8. Top the grilled shrimp with the mango lime and radish salsa and serve immediately.

Notes

  • Do not overcook shrimp as they can become rubbery quickly.
  • Use ripe but firm mango for the best balance of sweetness and texture.
  • Soak wooden skewers for at least 30 minutes to prevent burning.
  • Fresh lime juice is recommended for a brighter, more natural flavor.
  • The salsa can be prepared a few hours ahead and refrigerated.
