- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced

- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 lbs boneless skinless chicken thighs, cut into 2-inch pieces
- 1 1/2 cups plain yogurt (for tzatziki)
- 1/2 cup fresh cucumber, minced
- 2 tablespoons lemon juice
- 1 clove garlic, minced
- 2 tablespoons fresh parsley, minced
- 2 tablespoons fresh mint, minced
- 1/2 teaspoon salt (for tzatziki)
- 1/4 teaspoon black pepper (for tzatziki)
Instructions
- In a large bowl, whisk together yogurt, garlic, ginger, smoked paprika, coriander, cumin, turmeric, cloves, cayenne pepper, salt, and black pepper until smooth.
- Add chicken pieces and mix until fully coated. Cover and refrigerate for at least 2 hours or overnight.
- In another bowl, combine yogurt, cucumber, lemon juice, garlic, parsley, mint, salt, and pepper to prepare the tzatziki sauce. Chill until ready to use.
- Preheat the grill to medium-high heat and soak wooden skewers in water for 20 minutes.
- Thread marinated chicken onto skewers, leaving space between pieces.
- Grill skewers for 4–5 minutes per side, turning occasionally, until the internal temperature reaches 165°F (74°C).
- Remove from grill and let rest for a few minutes.
- Serve hot with chilled tzatziki sauce and optional lemon wedges.
