- 1 medium zucchini, thickly sliced
- 1 medium yellow squash, thickly sliced
- 1/2 medium red onion, cut into chunks
- 1 medium red bell pepper, cut into chunks
- 1 medium green bell pepper, cut into chunks

- 2 teaspoons minced garlic
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon chopped fresh parsley (optional)
- 2 tablespoons grated Parmesan cheese (optional)
Instructions
- Preheat the grill to medium-high heat, approximately 400°F.
- Wash and prepare all vegetables by slicing the zucchini and squash into thick rounds and cutting the onion and bell peppers into chunks.
- Lay a large sheet of heavy-duty aluminum foil on a flat surface.
- Add the prepared vegetables to the center of the foil.
- Drizzle olive oil over the vegetables and sprinkle with minced garlic, salt, and black pepper.
- Toss the vegetables gently to coat them evenly with the seasonings.
- Fold the foil tightly around the vegetables to create a sealed packet.
- Place the foil packet directly on the grill grates and cook for 5 to 8 minutes, flipping once halfway through cooking.
- Carefully open the foil packet to check tenderness. Grill slightly longer if needed.
- Remove from the grill, garnish with fresh parsley and Parmesan cheese if desired, and serve immediately.

- Use heavy-duty foil to prevent tearing while grilling.
- Cut vegetables into similar sizes for even cooking.
- Do not overcrowd the foil packet to avoid soggy vegetables.
- You can bake the foil packet in the oven at 375°F for 20 to 25 minutes instead of grilling.
