Description

These Grilled Zucchini Spears are a quick, healthy, and flavorful summer side dish made with fresh zucchini, olive oil, lemon juice, and Italian seasoning. Perfectly charred on the outside and tender inside, this easy grilled vegetable recipe pairs beautifully with chicken, seafood, burgers, or pasta dishes.

Ingredients

Scale
  • 2 medium zucchinis, cut into quarters lengthwise
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Wash the zucchinis thoroughly and trim off both ends. Slice each zucchini lengthwise into quarters to create spears.
  2. In a large mixing bowl, whisk together the olive oil, fresh lemon juice, Italian seasoning, garlic powder, salt, and black pepper until combined.
  3. Add the zucchini spears to the bowl and toss gently until evenly coated with the marinade. Let them marinate for at least 20 minutes.
  4. Preheat the grill to medium-high heat, approximately 400°F, and lightly oil the grill grates to prevent sticking.
  5. Place the zucchini spears directly on the grill in a single layer over direct heat.
  6. Cook for 4 to 5 minutes on the first side until grill marks appear and the zucchini begins to soften.
  7. Flip the zucchini spears using tongs and grill for an additional 3 to 4 minutes until tender but still slightly firm.
  8. Remove the grilled zucchini from the heat, garnish with fresh chopped parsley, and serve warm.

Notes

  • Avoid overcooking the zucchini to prevent a soggy texture.
  • Pat the zucchini dry before marinating for better seasoning adhesion.
  • For extra flavor, sprinkle Parmesan cheese over the zucchini after grilling.
  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • These grilled zucchini spears pair well with grilled chicken, seafood, burgers, and pasta dishes.
